Kabocha Fried Bread

Ingredients

Ingredients for 4 pieces

  • Three Good Men squash 200g
  • Bread sliced for sandwich 4 pieces
  • Butter 15g
  • Honey 30g
  • Frying oil as required
  • Cinnamon powder as required

Method

  1. Remove seeds from squash. Place squash in heat-resistant container and wrap. Heat in microwave for approximately 8 minutes (600 watts). When squash softens, mush it with skin off.
  2. Mix squash with butter and honey while it is hot.
  3. Paste squash on a bread slice and roll up. Skewer with a toothpick to prevent the bread from opening.
  4. Fry squash in frying oil (heat up to 170 degrees) until it turns brown.
  5. Sprinkle with cinnamon powder before serving.

Kabocha Meat Roll

Ingredients

Ingredients for 2

  • Three Good Men squash 100g
  • Spring onion 1/4
  • Pizza cheese 60g
  • Pork loin 6 sheets
  • Starch as required
  • Olive oil as required
  • Soy sauce 2 large tea spoon
  • Sake 2 large tea spoon
  • Sweet cooking sake 2 large tea spoon

Method

  1. Remove seeds from squash. Place squash in heat-resistant container and wrap. Heat in microwave for approximately 6 minutes (600 watts). Slice squash into 5mm.
  2. Cut spring onion into 5 cm length and slice vertically. Sprinkle salt and pepper on pork loin.
  3. Spread pork loin and place squash, spring onion and cheese, 1/6 each. Roll the pork loin and sprinkle starch.
  4. Heat frying pan and place olive oil. Bake (3). When the pork loin turns brown, mix in soy sauce and sake.

Kabocha Rice Flour Dumplings

Ingredients

Ingredients for 4

  • Three Good Men squash 150g
  • Refined rice flour(Shiratama-ko) 150g
  • Water approximately 150ml
  • Boiled red beans as required

Method

  1. Remove seeds from squash. Place squash in heat-resistant container and wrap. Heat in microwave for approximately 8 minutes (600 watts). When squash softens, mush it with skin off.
  2. Mix refined rice flour and (1) in a bowl. Gradually add water and knead until it becomes as soft as earlobe.
  3. Round (2) to bite-size. Press the center so that it will heat evenly.
  4. Prepare boiling water. Put in (3) and let it boil.
  5. When (4) starts to float, boil for another 2 minutes and put it in iced water.
  6. Serve with boiled red beans.

Kabocha Risotto

Ingredients

Ingredients for 2

  • Three Good Men squash 400g
  • Onion 1/2
  • Chicken thigh 200g
  • Butter 40g
  • Rice 1 cup approximately 150g
  • Salt as required
  • Water 400ml
  • Fresh cream 100ml
  • Grated cheese 2 large tea spoon
  • Consomme granules 2 small tea spoon

Method

  1. Remove seeds from squash. Place squash in heat-resistant container and wrap. Heat in microwave for approximately 3 minutes (600 watts). Cut into bite-size.
  2. Chop onion and cut chicken thigh into 1cm dice.
  3. Heat frying pan and place butter. Place (1), (2) along with rice. Cook until rice becomes transparent.
  4. Add water. After it comes to boil lower to low heat for approximately 15 minutes, stir occasionally. When rice softens add salt.

Kabocha Snack Pudding

Ingredients

Ingredients for 4

  • Three Good Men squash 200g
  • Egg 2
  • Olive oil as required
  • Parsley as required
  • Butter 30g
  • Fresh cream 200ml
  • Fresh milk 200ml
  • Consomme granules 1 small tea spoon

Method

  1. Remove seeds from squash. Place squash in heat resistant container and wrap. Heat in microwave for approximately 3 minutes (600 watts). Cut into bite-sized pieces.
  2. Mix (1) and egg in food processor. When smooth, place in a bowl.
  3. Heat butter in a pan until melted.
  4. Mix (2) and (3) and evenly pour into cocotte. Cover it each cocotte with aluminium foil.
  5. Place dishcloth on fry pan and place (4). Pour water until it covers half of cocotte. Cover fry pan and heat until boiling. Once it reaches boiling point cook on a low heat for 20 minutes.
  6. When it cools down place it in the refrigerator. Pour olive oil and parsley before serving.

Kabocha and Cheese Rice Cake

Ingredients

Ingredients for 8 pieces

  • Three Good Men squash 400g
  • Sugar 1 small teaspoon
  • Starch 1 large teaspoon
  • Grated cheese 80g
  • Butter 10g
  • White sesame as required

Method

  1. Remove seeds from squash. Place squash in heat-resistant container and wrap. Heat in microwave for approximately 8 minutes (600 watts). When squash softens, mush it with skin off.
  2. Mix starch and sugar into squash and divide into 8.
  3. Round (2). Wrap cheese and shape it into oval shape.
  4. Heat frying pan and add butter. Bake (3) until it turns brown. When cooked, sprinkle white sesame.

Kabocha with Grounded Chicken Ball

Ingredients

Ingredients for 6 balls

  • Three Good Men squash 300g
  • Grounded chicken meat 100g
  • Soy sauce 1 large tea spoon
  • Sake 1 large tea spoon
  • Sweet cooking sake 1 large tea spoon
  • Grated ginger 1 small tea spoon

Method

  1. Remove seeds from squash. Place squash in heat-resistant container and wrap. Heat in microwave for approximately 8 minutes (600 watts). When squash softens, mush it with skin off. Divide it into 6.
  2. Sauté grounded chicken on frying pan. Add soy sauce and sake and simmer until meat juice disappears.
  3. Flatten 1/6 of (1). Place 1/6 of (2) and roll into a ball.

Penne with Kabocha Sauce

Ingredients

Ingredients for 2

  • Three Good Men squash 150g
  • Penne 100g
  • Onion 1/2
  • Bacon 80g
  • Olive oil as required
  • Butter 10g
  • Consomme granules 1 small teaspoon
  • Fresh cream 50ml
  • Fresh milk 150ml

Method

  1. Remove seeds from squash. Place squash in heat-resistant container and wrap. Heat in microwave for approximately 8 minutes (600 watts). When squash softens, mush it with skin off.
  2. Cook penne in boiling water with salt. Follow instructions on penne package regarding boiling time. Keep water used for boiling.
  3. Slice onion. Cut bacon into 1cm width.
  4. Pour olive oil and butter in the heated fry pan. Sauté the sliced onion.
  5. When onion is cooked add bacon and consomme granules. Adjust sauce thickness by adding water used for boiling penne. Add penne and stir to mix with the sauce.
